Thinking of taking the 1911 build plunge. Have questions

I have been watching different videos. Mainly Mosin Virus. And decided I would like to try my hand a building my own 1911. But would like some input before I start putting out money.
First carbon versus stainless. Is one preferred over the other and why. I know carbon will have to have some kind of finish when it's done. How do you keep it from rusting while your working on it. This will take me a few months to build. I plan on buying all the tools to do the best job I can on it.
What books are recommended?
Is a match grade barrel worth the extra work, accuracy wise?
I was thinking of using a Wilson match grade barrel and Wilson slide.
